Through a pioneering partnership between Core Catering and Wilderer Restaurants, authentic Pinsa Romana has been made available not only to diners but also to the wider trade. Together, they opened Pinsa Connection in Woodstock, South Africa’s first dedicated Pinsa eatery, giving food lovers the chance to experience true Roman-style flatbreads.
With extensive training in Rome, Christian Wilderer became the first certified Master Pinsaiolo in South Africa and has since introduced not only authentic Pinsa Romana to the Cape, but also innovative creations such as Pinsetta and Pinsa Smiles.
Most importantly, Wilderer is the first to supply Pinsa bases commercially to the South African trade, making it possible for restaurants, cafés, and caterers to share this culinary revolution with their customers.


What is Pinsa Romana?
Pinsa Romana is an artisanal flatbread that originated in Rome, Italy. Unlike pizza, Pinsa uses a blend of wheat, soy, and rice flour, fermented for up to 24 hours, resulting in a lighter, crispier, and more digestible base. The word “Pinsa” comes from the Latin “pinsere,” meaning to stretch or press — perfectly describing its hand-crafted preparation.
